Here is one of my oddball recipes. To me, it's delicious. Unfortunately, not everyone likes this dish. If you like a lot of flavor, especially in variety, you may want to try this. I LOVE it, but again, not everyone will like it. Feel free to alter the recipe in any way you'd prefer.
Ingredients:
1-2 c. water or veggie broth
2 cups TVP
3 chopped large tomatoes
1 chopped green bell pepper
1 minced banana pepper (ripe)
1 cubed pineapple (to taste)
½ chopped red onion
½ c. kidney beans (if using canned, like myself, drain first)
½ c. black-eyed peas (same as above)
2 tbsp. cinnamon
1 tbsp. paprika
1 tbsp. crushed red pepper
1 tbsp. chili powder
pinch of salt
Add ingredients together in a large pot. Cook on medium heat. Stir well for a thicker mixture, and add spices as desired. When simmering and soft, turn off heat and let cool. This goes well on rice or mixed with rice and stuffed into bell peppers. I recommend a red pepper, because a green looks dim and yellow looks awkward.
